NOMI'S CHILE RELLENO-CORN CASSEROLE

Ingredients:
- 1 can (7 oz) Ortega diced green chiles
- 1 can (13 oz.) evaporated milk
- 2 lbs. grated sharp or medium Cheddar cheese
- 1 package S&W frozen corn kernels
- 4 eggs
- 2 tablespoons flour
- 1 jar (12 oz.) La Victoria Salsa Suprema (Medium or Mild)
Instructions:
- Spread diced green chiles and corn kernels on bottom of a 3 Qt. casserole dish.
- Spread half the grated cheese evenly on top. Add rest of corn and rest of the cheese.
- Mix well: eggs, evaporated milk, and flour.
Pour evenly over the cheese mixture.
- Spoon the Salsa Suprema evenly on top
(approx. 2/3 of the 12 oz. jar)
- Bake in pre-heated 400 degree oven for 30 minutes or until golden brown.
- Let stand for 5 minutes before serving.
- Serves 12 – 14 as a main or side dish.
Helpful Hints:
- The casserole can also be used as a dip for more people by serving it with sturdy chips such as Frito Scoops. (If you want it more “runny” for dips, use half the flour).
- All ingredients can be found at Safeway (diced chiles, Salsa, grated cheese).
Safeway has the cheese already grated (2 lb. bag of medium Cheddar) Costco has grated cheese (5 lbs bag of Cheddar/Monterey Jack).
- You can reduce calories by using skim evaporated milk and/or reduced fat cheese.
- Left over casserole can be frozen and then reheated in microwave oven.
