Nomi's Broccoli Quiche (doubled)

 

Ingredients:

2 2/3 cup milk
6 cups shredded sharp or medium Cheddar cheese (24 oz.) (reserve 2 cups for topping)
4 packages (10 oz. each) frozen chopped broccoli (thawed to room temperature)
1 1/3 cup chopped onion
6 eggs
1 1/2 cup Bisquick buttermilk baking mix
1 1/2 teaspoon salt

1/2 teaspoon pepper

 

Instructions:

  1. Preheat oven to 400 degrees. Grease a 13x9x2 inches casserole dish.
  2. Mix thawed broccoli with 4 cups of the cheese and the onion and put in casserole dish.
  3. Beat milk, eggs, Bisquick, salt and pepper until smooth (15 seconds in blender on high
    or 1 minute with hand blender).
  4. Pour milk mixture evenly over broccoli in pie plate.
  5. Bake for 30-40 minutes or until a knife inserted in center comes out clean. 
  6. Top with remaining cups of cheese and bake just until cheese is melted (~2 minutes longer)

Let stand for 5 minutes before serving.

Optional:
Add other ingredients to the broccoli/cheese/onion mixture such as: crumbled, cooked bacon or chopped ham or, garnish the top with tomato slices.
