Nomi's Broccoli Quiche


Ingredients:

1 1/3 cup milk
3 cups grated sharp or medium Cheddar cheese (12 oz.)
2 packages (10 oz. each) frozen chopped broccoli (thawed to room temperature)
2/3 cup chopped onion
3 eggs
¾ cup Bisquick buttermilk baking mix
¾ teaspoon salt or seasoned salt
¼ teaspoon pepper
Optional: spices/herbs to taste

 

Instructions:

    • Preheat oven to 400 degrees. Grease a 10 x 1 ½ inch pie plate.
    • Mix thawed broccoli with 2 cups of the cheese and the onion and put in pie plate.
    • Beat milk, eggs, Bisquick, salt and pepper until smooth (15 seconds in blender on high
      or 1 minute with hand blender).
    • Pour milk mixture evenly over broccoli in pie plate.
    • Bake for 25-35 minutes or until a knife inserted in center comes out clean. 
    • Top with remaining cup of cheese and bake just until cheese is melted (~2 minutes longer)
    • Let stand for 5 minutes before serving.
      Serves 6 – 8 as a main or side dish.

    Optional:
    Add other ingredients to the broccoli/cheese/onion mixture such as: crumbled, cooked bacon or chopped ham or, garnish the top with tomato slices.
